Tomato Pie

OK So as promised, here is the Tomato Pie Recipe!! I am telling you it is SO good!!! I intended to take a picture but we were too busy ravaging it! We had the leftovers for dinner last night too and it was great re-heated as well!!

The only change I made to this recipe was to use fresh basil and I used quite a bit more than it called for. Enjoy!

Tomato Pie Recipe:

Bake 1 Pillsbury Pie Crust first
Slice 3-4 tomatoes/layer in crust add salt/pepper
Mix:
1/2 cup mayo
2 cup mozzarella
1/2 tsp basil
1/4 cup onions (green or reg)

Spread Mixture over tomatoes
Crumble 12 townhouse crackers/mix w 2tbsp melted butter (or spray with butter spray)

Cover Pie
Bake on 350 for 25 min

Routines are Awesome

I'll admit, my inner AR personality loves routine. As much as I might complain of boredom at times, I really love knowing things ahead of time, planning out a schedule and having things in their place. This doesn't mean I am an exceptionally clean person. It just means that when I am, I am much much happier.

With that, it's nice to know I now have an "extra set of hands" so to speak. One of Jerry and my favorite wedding gifts was the Hamilton Beach Brewstation Deluxe!


I usually load it up the night before and it makes our coffee at 6:50am every day! What's even better is that while I am getting ready and making the bed, Jerry is in the kitchen pouring and doctoring up said coffee. It's magical! He even brings it to me!! This makes days when I am running late SO much better because even if all I eat is a banana, I know I will get my coffee.

It has been really fun trying to figure out a routine that works for us. So far, things have gone pretty smoothly in that department. Now that we are getting things cleared out of the house and making an actual place for others, I think both of us are starting to relax and settle into being married.

SO yeah, pretty much awesome :-)

Happy Monthiversary!

It is hard to believe but today marks our first MONTH of being married!!! I feel so behind in terms of blogging, but in real life we are kicking A !!

The house is really coming together. We are both getting things settled in and have decided to use the shed as a temporary home for all things garage sale! We quickly grew tired of Craigslist people saying they would come and then not showing up! So, we are going to try and unload the remnants of our single lives in one day. Here's hoping!

I have also taken quite the liking to domestication. I went grocery shopping and pretty much have a meal plan for the next 3 weeks! Tonight - Tomato Pie!! It's a recipe I got from work. I'll let you know how it turns out tomorrow.

Also, the new leaf of activity has been successfully turned over! For a couple weeks now, we have been getting up early and taking the dog for a walk before work. Of course I know that ultimately, I will still need to do more strenuous workouts, but I think this is a good heart-healthy start. And we have declared Sundays to be fuel-free. Pretty much our only obligations on this day are to go to church and we have been riding our bikes the just under 7 mile round trip and trying to get things done around the house for the erst of the day. It's been neat to actually pull it off and makes me feel a bit better about driving 20 minutes to work every day.

SO that's pretty much it! Things are good. We are starting to settle into more of a routine which is really fun. Happy Tuesday everyone!
