Meal Planning Monday!
One of these days, I will actually do this post on Monday, but once again we are a day late and a dollar short. Oh well! It's a good thing I have a delicious pizza to show you!
Friday night is Pizza night in our house and I love that for so many reasons. I love that we have a constant each week to look forward to. I love Friday nights in general and Pizza is the perfect food to usher in the weekend. It's like a little celebration for family time! It's funny how Pizza night has evolved also. When I was working an office job, we would often have pizza because we were too tired to do anything else and it was almost always frozen. Every now and again we would splurge for Piccola Italia (our favorite local haunt) and that was surely a special night! Now that I am home with Oscar, I can put a little more love into our Pizza.
I make the dough using the easiest. recipe. ever. given to me by a friend as a wedding present, add sauce and fresh veggies, top with cheese and bake on 500. Yes 500. I think that is the key to getting those yummy overdone cheese bubbles. I would love to say that I made our sauce from our garden tomatoes, however our squirrels have poached them ALL and we haven't gleaned a single one this year. Don't even get me started.

we made a white pizza on sunday night -- olive oil, fresh garlic, fresh spinach, ricotta, prosciutto, fresh moz, fresh tomato, and just a smidge of italian blend cheeses for the "melty" effect.
but you, my friend, made your dough. lily's made ours. :)
